I'm giving Macarons another go. If you try it enough times, it has to turn out okay once, right? Round two, start. This terrifies me. Last time went so horribly wrong.
I've got Netflix on, it says there is a lot of sitting time. Lets hope for the best!
I got the recipe here this time.
Start out with three egg whites, beat until fluffy white. Then beat in 1/4 cup white sugar, beat until egg whites are fluffy and glossy.
In a food processor sift 1 cup almond flour and 1 2/3 cups confectioners sugar.
Quickly fold the almond flour mixture with the egg whites. About 30 turns, or till evenly mixed.
Spoon into a piping bag.
Pipe the batter into rounds on a baking sheet placed evenly apart. Beat the tray down on the counter to get any air bubbles out. Don't be afraid to be quite rough about it. Let sit uncovered for an hour or more, this is so important because it creates a skin on the top of the batter, keeping the top from cracking.
