Dawnny might never let me cook any other meal again. I wouldn't complain either, lemons know me, they call my name, and they even show up in my dreams.
I once was hanging out with a friend when we went to the grocery store to grab a snack, they grabbed an apple. Me? A lemon. That friend stared at me, frightened I had gone round the bat, as I pealed my lemon much like an orange and devoured it. It was delicious, and I do that often,
Dawnny use to make me peel my lemons in the car so the smell of it would make the car smell lovely for a while after. She has never complained. And a sour pucker face? I don't know that I am capable of having one. Sourness speaks to me.
This recipe is not overly sour, in fact I added more lemon juice to my portion, Dawnny said it was perfect as it was.

You will need; 3 lemons, 1 1/4 pounds potatoes, 3 tablespoons olive oil, 1 tablespoon rosemary, 1 teaspoon salt, and freshly ground pepper.
Cut one of the lemons and obtain 2 tablespoons juice. Cut the remaining lemons into thin slices.
Place Slices over Baking Pan.
Cut Potatoes thinly.
Then layer then layer the potatoes on the pan on top of the lemon slices.
Pop it into the oven at 375 degrees for 25 minutes. The potatoes should be a tiny bit brown. Then take them out and flip them.
Place them back in the oven for another 15 - 20 minutes, or till they are easy to cut through.
They should be glorious, and beyond delicious.
We devoured them in minutes. Seems to be a common thing for us to do with food. But these were so good. I cannot explain how much I love these. And the lemon is such a surprising taste!
