Potato Gnocchi

I failed at Potato Gnocchi before. I know why now.
Kneeding your dough is so important! I don't think I kneeded my dough long enough last time, my elasticity wasn't there at all.  This time, it was there, very clearly there, and that's what made it work.


I got the recipe here.

Start with 1 cup of potatoes, mashed (about 2 medium potatoes.) 2 cups of flour and 1 egg. Mix together.


Kneed dough till elastic.


Roll dough into a long snake like shape and then cut into small pillowcase shapes.



Place in boiling water and let cook till it floats to the top (about 4-5 minutes.)


Serve with sauce! It ended up being so easy to make, its embarrassing that it didn't work last time, because it honestly is so amazing.
